A Great Appetizer
Most of my recipes are inspired by whatever happens to be in the refrigerator that day. This one is no different. It started out as a quick snack and turned into a great appetizer for any party. I recently served this at a baby shower and it got rave reviews. This is very easy and can be done up to 24 hrs ahead of time. I made mine in the morning and served it in the afternoon and it was great.
Turkey and Lingonberry Pinwheels
4 flour tortilla
4 oz cream cheese
1 lb deli turkey breast
8 tbsp lingonberry sauce
4 leafs of lettuce
Makes about 40 pinwheels
Warm tortilla in microwave for 15 seconds. Spread 1 ounce of cream cheese on each tortilla. Place 4 slices of deli turkey breast to cover the entire tortilla. Spread 2 tbsp of ligonberry sauce on the turkey. Top with 1 leaf of lettuce per tortilla. Roll tighty and wrap with aluminum foil and refrigerate for at least 4 hours. Cut into 1 inch slices. Stick with toothpick to hold together each pinwheel. Enjoy!

Lingonberry sauce is a made of the lingonberry which is abundant in Scandinavia. They make a sweet but tart jam which is typically used in savory dishes such as Swedish meatballs. You can find this at specialty stores or if there is a local Ikea, you can check there also.
