There’s something about the summertime that makes us more social; we tend to go out a lot more as well as entertain. I find myself having that fever and recently, with the help of Bud Light Lime Rita, brought happy hour into my home with an impromptu gathering that turned into game night. My husband had a few friends over and so did I; we pulled out the games and had a grand old time while sipping on Bud Light Lime Ritas because everyone needs a little Rita Hour in their day. Have you tried a Bud Light Lime Rita yet? I love that they have a wide variety of flavors; I served the Lemon-Ade-Rita (we all need lemonade in the summer), Mang-O-Rita and Straw-Ber-Rita. We played dominos and an aggressive game of monopoly; I set out a few munchies close enough so that we wouldn’t have to get up just to get a snack. I kept the menu fairly simple since it was super last minute and served up cheeseburger sliders, wings, guacamole with plantain chips and a super easy but oh so good black bean and corn salsa with tortilla chips. Let me tell you about this salsa: it is ridiculously simple to make and most of the ingredients I always have on hand, which makes it fuss free. It’s light and, dare I say it – healthy! I served this as a dip but this would be great over fish, chicken or tacos. We had a super fun night, who doesn’t love a spontaneous party?

Black Bean and Corn Salsa
1 can black beans, drained and rinsed
2 ears corn, grilled
¼ cup finely chopped red onion
2 roma tomatoes, finely diced
2 cloves garlic, crushed
Juice of 1 lime
½ tsp black pepper
½ tsp salt
½ tsp honey
2 tbsp finely chopped cilantro
Place all ingredients in a bowl, stir to combine. Place in the fridge for at least an hour before serving. Add fresh chopped cilantro and serve with tortilla chips.
