Garlic Roast Chicken-1-4

I love a good chicken recipe, but I’m all for it being effortless. On the days when my plate is full I make meals as simple as possible and one of my go to recipes would be this simple marinade which I use on pork or chicken. Garlic Roast Chicken-1-5I will usually marinate the chicken the night before in the fridge, so all I have to do the next day is toss it in a pan and roast it. It doesn’t get easier than that!Garlic Roast Chicken-1-2 I love the freshness of the herbs and the citrus flavors brighten the dish. This is definitely a winner, winner, chicken dinner. Roast Chicken with a Citrus Herb Marinade
8 leg and thigh pieces
½ cup orange juice
1 tbsp lime juice
1 tbsp lemon juice
1 tbsp oil
2 tbsp crushed garlic
¼ tsp cumin
½ tsp black pepper
½ tsp red pepper flakes
2 1/2 tsp salt
¼ cup cilantro
½ tsp dried oregano

Place all ingredients in a large resealable bag and refrigerate overnight. Preheat oven to 400 degrees. Remove chicken from the marinade and place on a baking pan; discard the marinade. Place in preheated oven and bake for 45-50 minutes or until golden brown.

    Could you use chicken breast for the recipe? And if so, should you bake it in the marinade for a juicy breast?

    Reduce the cooking time or it will be dry.

    MADE this last night, very very good and juicy. I can’t wait to try on pork chops.
    Cooked for 55 min and temp was good. Added Pam to top of skin which makes it come out crispy on top. Really great!
