BACON AND CHICKEN FRIED RICE

Bacon and Chicken Fried Rice is a quick and easy meal.  With school reopening, meals like this come in handy for busy weeknights.  It uses fully cooked rotisserie chicken and leftover rice which cuts back on cook and prep time.  Bacon adds an extra layer of flavor to an already flavorful dish.  This meal is sure to please the entire household and the best part is, it’s ready in less than 30 minutes.

WHICH PROTEIN TO USE

To keep this meal quick, use store bought rotisserie chicken.   Cut the meat from the breast and slice into small cubes but you can also shred the chicken using your hands.  For the bacon, it is best to use a thick cut, meaty bacon.  Once most of the fat is rendered from the bacon, what remains is a slightly chewy, slightly crispy piece of bacon that’s takes this dish to the next level.   Turkey Bacon is not recommended  as a substitute as it does not have the fat, texture nor flavor of real bacon.

TIPS TO MAKING THE BEST FRIED RICE

Prepare all ingredients before starting the cooking process because this is a very quick dish.  Chop onions and scallion and any other ingredients and have it ready for cooking. 

Place all ingredients by the stove if possible so that you won’t need to leave the fried rice unattended.

Use cold, day-old rice.  Cold rice works best in this dish and doesn’t run the risk of becoming overcooked and mushy.  Plan ahead of time by making extra rice and save for making fried rice the next day! 

If you’re using rice that you cooked that day, after cooking the rice, spread out on a baking sheet pan and place in the fridge.  This helps it to cool down and remove some of the moisture.

A wok is perfect for making this dish.  If you don’t have a wok then a wide frying pan is the next best thing.  Make sure the pan is wide enough so that the rice can have room to fry and not steam.

To add an extra level of flavor, spread the rice out on the pan and let cook for a few minutes, allowing it to brown.  This adds smokiness to the rice.

FLAVOR BOMB

The combination of soy sauce, garlic, onion, and ginger gives this dish a ton of flavor.  Sesame oil add a nuttiness to the dish that’s commonly found in fried rice.  And let’s not forget the bacon!  Just a few simple ingredients is all it takes to make an amazing weeknight meal without skimping on flavor.

Ingredients
 

  • 5 cups cold rice
  • 3 strips bacon, cut into 1-inch pieces
  • ¼ cup chopped onion
  • 1 tbsp. crushed garlic
  • 1 cup rotisserie chicken cut into small pieces
  • 1 tsp vegetable oil
  • ½ cup frozen peas and carrots
  • 1 tsp black pepper
  • 1 tsp ground ginger
  • 2 tsp soy sauce
  • Salt to taste
  • 3 scallion, chopped
  • ½ tsp sesame oil

Instructions
 

  • Break up any clumps in the rice using your fingers.  In a large frying pan or wok add bacon and
    cook until brown then remove from pan using a slotted spoon.

  • Add onion and sauté for 1 minute then add garlic and cook
    for 30 seconds, then add rotisserie chicken and stir to combine. 

  • Add rice, frozen peas and carrots, soy sauce, black pepper,
    ground ginger and salt and mix well. 
    Cook on high heat.  Spread rice
    out and let cook until a crust starts to form on the bottom.

  • Add cooked bacon, scallion, and sesame oil, then mix to
    combine.  Serve immediately.
