A New Beginning….
I spent the last month obsessing over the details of a baby shower for my favorite cousin Kanema. I knew whatever we did had to be perfect. It had to reflect her taste and be cute. Also I had a Martha Stewart like reputation to upkeep since she boasts to all her friends at work about my abilities. Well I set out to prove her right. She’s having a boy so the all decorations were blue and brown. The food was wonderful..I somehow managed to do it all. The menu included fresh guacamole and chips, cocktail meatballs, chicken satay, coconut shrimp, fresh fruit salad, dill stuffed tomatoes, quiche, turkey cranberry roll ups and for dessert lemon cheesecake with a strawberry topping, cupcakes and a coconut cake with a divinely delicious coconut custard filling. My mom graciously made the best Guyanese style beef patties. It was a feast and the mother-to-be was very pleased with it all as were the guests. Here are a few pics from my crazy Easter weekend and a recipe for delicious guacamole.
Coconut and chocolate cupcakes with a white chocolate coconut frosting and topped with a homemade candy
Shower cake with a wee little baby asleep…he took me about 10 mins to make..I was proud of this one.
Diaper cake..made with diapers, blankets and bottles..made this with the assistance of my mom.

Guacamole
2 avocados
2 plum tomatoes chopped finely
1 small onion chopped
1 finely chopped jalapeno
1 clove garlic
juice of one lime
salt to taste
3 tbsp chopped cilantro
Mix chopped tomatoes, onions, jalapenos and cilantro and lime juice. Peel and mash avocados with a fork and add to the tomato mixture. Add salt and cilantro. Enjoy!!! I make the tomato mixture a few hours ahead of time and add the avocado just before Im ready to serve so it’s as fresh as it gets.
