QUICK AND EASY CITRUS ROAST CHICKEN

Lately I’ve fallen in love with the humble roast chicken. Once upon I time, I gave up on eating chicken entirely so I’ve surprised even myself with my new found appreciation.
I love the ease of roasting chicken and how just a few ingredients can transform it. Here I made a simple marinade with just a few ingredients and the results was outstanding.
I love that this is simple enough that it can be thrown together in a jiffy. It was so full of flavor and just downright good and all it took were 7 simple ingredients.

Citrus Roasted Chicken
8-10 pieces chicken thigh and leg
1 tbsp thyme, finely chopped
The juice and zest of 1 lemon
2 tsp garlic powder or fresh garlic
1 tsp black pepper
1 ½ tsp salt
1 ½ tbsp oil
Preheat oven to 400 degrees. Rinse chicken and set aside. Mix all other ingredients together to make the marinade. Coat the chicken with the paste. Place onto a baking pan then place into preheated oven on a rack that positioned in the middle of the oven. Bake for 1 hour until golden brown and crispy.
