I love plantains but it has to be super green or super ripe, nothing in between. I love the sweet ripe plantains that you often get with Caribbean take-out, who doesn’t? If cooking plantain in any other form, I prefer it to be green. Over the years I’ve had green plantains in soup, stews, as chips or mashed but it wasn’t until recently that I came across these plantains fritters called Aranitas (meaning little spiders). After shredding the plantains, I mixed it with garlic and fried it until it’s crispy and golden. These are super easy and great as an appetizer when served with this Mayo dip or even guacamole!Aranitas-1

Aranitas(Green Plantain Fritters)

2 green plantain, peeled and shredded
2 tsp garlic paste
½ tsp salt
oil

Mayo Dip
½ cup Mayo
3 tsp lime juice
1 tsp cilantro, finely chopped
1 tsp honey
Salt and pepper to taste
To make the fritters, mix shredded green plantain, garlic and salt. In a frying pan add enough oil so it’s about ½ inch deep and heat over medium fire. When oil is hot, scoop the shredded plantains (about 2 tablespoon) and then press gently for form a patty. Slide into the hot oil and cook until both sides about 2-3 minutes until golden brown, flipping after the first side is brown.
Remove from oil and drain onto a paper towel.

To make the sauce, add mayo, lime juice, cilantro, honey and mix to combine. Add salt and black pepper to taste.
