CHEESY SCRAMBLED EGGS AND A SWEET MEMORY WITH COFFEE-MATE

Most families these days are too busy to sit down to a meal together because of demanding schedules. In a world where we have to coordinate schedules just to see each other, something as simple as sitting to a meal together has become a rarity. This is no different from what happens in my family, so recently we made an effort to re-create the early days when we would always have breakfast together. I prepared a simple breakfast, not unlike what we have on any other day, as I always believe that breakfast should be effortless. My simple menu, which included perfectly scrambled cheese eggs on croissants with a fresh fruit tray, was well received by my son and husband. As always I have to have a cup of coffee with my breakfast and Nestle Coffee-mate’s variety of flavors such as Caramel Macchiato and Toll House Chocolate Chip Cookie allow me to switch it up with minimal effort. Since I prepared a fairly rich breakfast, I kept my coffee simple by adding a splash of Coffee-mate Classic Vanilla liquid creamer.
Breakfast was a success and it’s something I would absolutely love to do more often.
Now about these cheesy eggs! This happens to be something I make pretty often for breakfast because it’s simple and it’s tasty. When it comes to scrambling eggs, technique is important. Have you ever had seriously rubbery eggs? That’s because it’s overcooked; it was probably cooked on high heat. The key to good scrambled eggs is low and slow. I like to add a splash of milk and grated cheddar cheese to give it a bit more richness.
Cheesy Eggs
3 large eggs
2 tbsp milk
Salt and pepper to taste
½ tbsp butter
¼ cup sharp cheddar cheese
Crack eggs into a small bowl. Add milk, salt and pepper and beat with a fork. In a small non stick pan, add butter over medium heat. When the butter has melted and is foaming, turn the heat down to low and add eggs. Let the eggs sit for about a minute then using a wooden spoon, gently stir the eggs; stir eggs every 20 seconds or so. When the eggs thicken and begin to set, sprinkle cheese and stir. Let eggs cook for an additional 30 seconds, then turn off heat. The eggs should be still a bit wet on the top. Remove from the pan and place onto a plate. Let sit for about a minute or so, the heat from the eggs will continue to cook the eggs. If desired, sprinkle with fresh herbs then serve!
