Apple Cobbler
Tomorrow is Thanksgiving! I hope that you all have your menus ready! I’ve shared a few recipes all month that would be perfect for those of you who are still planning. The last Thanksgiving recipe that I’m sharing is Apple Cobbler. If you love apple pie but are intimidated by pie crust then this recipe is perfect! A sweet, buttery biscuit like topping covers the cinnamon apple filling. It has all the flavors of apple pie but is less work!
Apple Cobbler
Filling
6 medium granny smith apples + 2 gala apples
¾ cup brown sugar
½ tsp ground cinnamon
Pinch nutmeg
2 tbsp all purpose flour
2 tbsp butter
Crust
1 cup all purpose flour
1 tsp baking powder
1/8 tsp salt
¼ tsp ground cinnamon
¼ cup sugar
4 tbsp cold butter
¼ cup milk
Preheat oven to 400 degrees.
To make the filling: Peel, core and thinly slice apple. Place into a large bowl with brown sugar, cinnamon, nutmeg and flour and mix well to coat. Place in a pie dish or 8×8 baking dish and top with butter.
To make the crust: Place flour, baking powder, salt, cinnamon and sugar in a bowl and mix. Cut butter into small slices then cut the butter into the flour. (You can use a food processor for this step and pulse until there are pea sized pieces of butter then pour into a bowl). Add milk to the flour mixture then mix just until it forms a soft dough. Break of small pieces of dough and top the apples; repeat until the apples are covered. Place into preheated oven and bake for 25-30 minutes or until golden brown.
Place on a cooling rack and cool for an hour before serving.
