Once upon a time, long, long ago, I used to be a bartender.  Well, maybe not so long ago. Let me do the math…15 years ago, to be exact.  In my early 20s, I was a young bartender in NYC. I was a certified mixologist (if that’s actually a thing).  I actually went to a bartending school, where I spent 2 weeks learning the art of slinging cocktails and classic drink recipes.  Armed with my new skills, I went to the first place that I saw a bartending opening, and that was the local bar in my neighborhood. I spent a few years bartending, and it was then that my love for making a cocktail was born.

That’s a long time ago, but I do like to make cocktails at home from time to time, especially using Malibu® Caribbean Rum with Coconut Liqueur and Jameson® Irish Whiskey.  Malibu is Caribbean rum mixed with coconut liqueur that’s perfect in any summertime cocktail, like this Pineapple Coconut Rum Punch.  The pineapple juice and Malibu rum are a perfect pair, and if fruity drinks are your thing, then you will love this one.

Jameson is a triple distilled whiskey, which is a blend of pot still and grain whiskey – it’s perfect in a cocktail or by itself.  This Orange Vanilla Cocktail is sort of a nod to an Old Fashioned but with a fresh spin with the ginger beer and a little less sweet for those that aren’t into fruity cocktails.  I call these His and Hers Cocktails.

Ingredients
 

  • Pineapple Coconut Rum Punch ingredients:
  • 1 ½ oz Malibu Rum with Coconut Liqueur
  • ½ oz lime juice
  • 1 oz grenadine
  • 2 oz pineapple juice
  • Orange Vanilla Whiskey Cocktail ingredients:
  • 1 ½ oz Jameson Irish Whiskey
  • ½ oz vanilla syrup
  • Ginger beer
  • Orange peel
  • Maraschino cherry

Instructions
 

  • To make the Pineapple Coconut Rum Punch:
  • Pour ice in a Collins glass. Mix Malibu rum, lime juice and pineapple juice. Pour grenadine syrup into glass then pour Malibu mixture over top. Garnish with lime wedge and maraschino cherry.
  • To make the Orange Vanilla Whiskey Cocktail
  • Fill an Old Fashioned glass with ice. Add whiskey and vanilla syrup then top with ginger beer. Garnish with orange peel and a maraschino cherry.
