Beets are an underrated vegetable and to be honest, I didn’t love it until a few years ago. After having it in amazing ways at a few restaurants here in Atlanta, I fell in love! Good thing because I ate quite a bit of beets when I was in Israel earlier this year and I loved it all. I now make beets at home and love them roasted so why not put them in a bountiful fall salad?
One thing about beets that most people fear is that it stains everything – from your hands, to your cutting board and your teeth. Now I know that it can be intimidating to prepare beets at home but here are a few tricks that I use with beets. I always use baby beets or medium sized beets; I find that they have less of an earthy flavor than the larger ones. Use gloves when handling the beets if you’re concerned about staining your hands but if not the stains will wash away in less than 24 hours. I love roasting beets with just salt, pepper and olive oil but sometimes I toss it in harissa, a north African spice.
For this salad I roasted it with just salt and black pepper because the salad has a lot of other flavor components. The roasted beets tossed with walnuts, mixed greens and parmesan slivers then topped with white balsamic vinaigrette was simply amazing. If you’re not a lover of beets I promise you this salad will change your mind and the homemade salad dressing is amazing as well. Ingredients
- 3 medium beets, peeled
- 1 tsp olive oil
- ¼ tsp black pepper
- ¼ tsp salt
- Parmesan cheese
- Walnuts, lightly toasted
- Mixed salad greens
- Dressing
- 3 tbsp white balsamic vinegar
- 3 tbsp olive oil
- 1 tsp Dijon mustard
- 2 tsp maple syrup
- 1 garlic clove, crushed
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Preheat oven to 400 degrees. Cut beets into wedges then toss with olive oil, salt and black pepper. Place on a baking pan, making sure the pieces don’t touch. Place in preheated oven and roast for 25 minutes. Remove for oven and cool.
- To make the salad dressing, place white balsamic vinegar, olive oil, Dijon mustard, maple syrup, crushed garlic, salt and black pepper in a jar, cover and shake to combine.
- To make the salad, place mixed green in a large bowl and top with roasted beets, walnuts, parmesan shavings. Keep salad dressing on the side until it’s time to serve.
