Spanish Rice
I’m always on the hunt for new ways to cook rice since we eat rice almost daily. Spanish rice is a great side dish that’s simple and all it needs is just a few ingredients. Whenever I’m roasting chicken, or making some type of protein that doesn’t have a sauce, I like to serve it with seasoned rice. What I love about Spanish rice is that’s I usually have all ingredients on hand and the kids love it! It’s always challenging to make meals that the entire family loves and this Spanish rice is one of those. Roast salmon, baked chicken or a roast along with vegetables go well with this dish.

Ingredients
- 1 ½ tsp oil
- ½ onion
- 3 cloves garlic, smashed
- 1 ½ tbsp tomato paste
- 2 cups rice
- 3 ½ cups water
- 3 chicken bouillons
- ½ tsp cumin
- Salt to taste
- Chopped cilantro
Instructions
- Add oil to a pot over high heat; when oil is hot add onion and garlic and sauté for about 3 minutes, or until softened.
- Add tomato paste and cook for about 2-3 minutes, stirring frequently.
- Add rice, water, crumbled bouillons, cumin and salt and stir. Bring to a boil, then reduce heat to low and cover pot.
- Cook for 20-25 minutes or until rice is tender, then garnish with chopped parsley
I was raised by my great grandmother she was over 70 when I was born.
Everyday when I came home for lunch she made a rice like this. I never had it again in my life after she died.
It’s like this but a little oily
