I’ve used them in salads, to make tuna and chickpea cakes (so good) and of course to make the humble tuna sandwich.  StarKist E.V.O.O™ is packed in cold pressed extra virgin olive oil so it has a ton of flavor, so you don’t have to do much to make amazing dishes.   I used the salmon to make quick homemade salmon fried rice and it was absolutely delicious. I’m all about quick meals and honestly as a mom of two young boys sometimes mealtime can be challenging, and you don’t always have a ton of time to get a meal on the table.  Dishes like Salmon Fried Rice are a quick and easy way to make a meal that I know my kids will love and is ready in 30 minutes or less.

 

What makes this dish easy is that you start with precooked rice – it is important to always use day old cold rice when making fried rice for the best results.  Most of the ingredients take just a few minutes to cook so the cooking process takes about 15 minutes!  Using StarKist E.V.O.O™ Pink Salmon in Extra Virgin Olive Oil is a great addition to this dish and gives it a ton of flavor!  The best part is all you have to do is open the pouch and add it directly to the rice for an easy and delicious dinner that the entire family is sure to love!

Get the Recipe Salmon Fried Rice

Cook Time: 15 minutes
Total Time: 15 minutes

Ingredients
 

  • Salmon Fried Rice
  • 2 tbsp oil
  • ¼ cup diced onion
  • 1/3 cup diced red bell pepper
  • 2 cloves garlic, crushed
  • 2 cups precooked cold white rice
  • 1 tbsp soy sauce
  • ½ tsp red pepper flakes
  • ½ tsp paprika
  • ½ cup frozen green peas
  • 1 pack StarKist E.V.O.O™ Wild-Caught Pink Salmon in Extra Virgin Olive Oil
  • 2 scallions, chopped
  • Salt to taste, optional

Instructions
 

  • In a pan over high heat, add oil. When oil is hot add onion and red bell pepper and sauté until softened, about 2-3 minutes.
  • Add crushed garlic and cook for about 30 seconds, just until it’s fragrant.
  • Add cold rice, soy sauce, red pepper flakes, paprika and frozen green peas and mix to combine.
  • Cook for about 5 minutes, stirring occasionally.
  • Add StarKist E.V.O.O.™ Salmon and scallions and stir. Cook for an additional minute.
  • Remove from heat and serve immediately.
