I love curry and have share many recipes over the years.  Goat curry is one of my favorites!  I’m sharing a new recipe and video up on my Youtube Channel today(subscribe!).  I served it with my Mom’s Roti which is the best so be sure to head on over!  Goat curry, or curry goat as it’s referred to in the Caribbean, is one of the more popular Caribbean curries as it is commonly found in most Caribbean and Guyanese restaurants.  My favorite way to have goat curry is with roti but I also love it white rice! Goat Curry

Get the Recipe Goat Curry

Ingredients
 

  • 3 lbs goat meat
  • juice of 1 lime
  • 5 cloves garlic, crushed
  • ½ tsp diced wiri wiri pepper
  • 1/4 cup curry
  • 1 tsp garam masala
  • 1 tsp cumin
  • 2 tbsp green seasoning
  • ¼ cup water
  • 1 bay leaf
  • 3 tbsp oil
  • Chopped scallion

Instructions
 

  • Place goat in a bowl with enough water to cover and juice of 1 lime. Rinse thoroughly. Add garlic, pepper and salt and stir to coat. Set aside.
  • To make Paste, mix curry powder, cumin, garam masala, green seasoning and ¼ cup water. Heat canola oil in a large pot on a medium fire, when oil is hot, add curry paste and fry for about 5-10 minutes.
  • Add seasoned goat, stir well to coat with curry. Cook slowly for 20 to 25 minutes. Add bay leaf and enough water to cover the goat. Bring to a boil, turn fire down to low and simmer until goat is tender. Remove from heat and add chopped scallion to garnish.

Notes

If using a pressure cooker, after adding the meat to the curry paste let goat cook in its own juice for 20 minutes.   Add enough water to cover and pressure for 20 minutes after the pressure cooker starts to whistle.
