Lobster Mac and Cheese

Lobster Mac and Cheese

Ingredients
 

  • 1 lb macaroni, cooked according to the directions on the box
  • 1 ½ cup cooked lobster meat, cut into 1 inch pieces.
  • 12 oz sharp cheddar cheese
  • 8 oz fontina cheese
  • 8 oz provolone cheese
  • 4 oz gruyere
  • ¼ cup butter
  • ¼ cup flour
  • 4 cups milk
  • ¼ tsp black pepper
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp salt

Instructions
 

  • 1.Preheat oven to 350 degrees. Grease a 13 x 9 baking dish then set aside.
    2.In a large heavy bottom sauce pot over low heat melt butter. Add flour and stir until smooth.
    3.Add milk and cook until milk is warm and sauce has thickened a bit. Set 1 1/2 cup of grated cheese aside, this will be for the top.
    4.Add reminder of cheeses, black pepper, Dijon mustard, paprika, garlic powder and salt and then stir until smooth. Add macaroni and cooked lobster pieces to the cheese sauce, stir making sure the macaroni is well coated.
    5.Pour into a large baking dish, sprinkle with remaining cheese.
    6.Place into oven and cook for 25-30 minutes or until bubbling and golden brown.
    7.Remove from oven. Allow to cool before serving.

Notes

To cook lobster, steam in a pan with about 2 inches of water for 10 minutes. Cut in half lengthwise then remove the meat from the shell. Cut into 1 inch pieces.
