Crispy Oven Fried Chicken

I love fried chicken but hate frying. Because of this I rarely make fried chicken. A great alternative is frying the chicken in the oven. The chicken is floured and coated just as you would traditional fried chicken but it is entirely cooked in the oven.
Less time spent in front of the stove and it’s healthier! What’s the secret? Spraying the chicken with canola oil spray and cooking at a high temperature creates a crispy crust on the outside while the meat remains juicy. This recipe is a keeper! I would recommend it to the lovers of the traditional fried chicken to give it a try, you will be pleasantly surprised.
Oven Fried Chicken
8 pieces of chicken, I used leg and thighs
2 tsp garlic powder
1 tsp onion powder
½ tsp paprika
½ tsp cayenne pepper
½ tsp black pepper
1 tsp dried parsley
2 tsp salt
1 ½ cup flour
1 cup milk
Canola spray
Preheat oven to 400 degrees. Generously spray a large baking sheet with canola spray.
In a small box mix garlic powder, onion powder, paprika, cayenne pepper, black pepper, dried parsley and salt. Place chicken in a large bowl then add 2 tsp of spice mixture to chicken. Make sure to coat both sides of the chicken.
Place flour and remaining spice mixture on a large plate, and mix to combine. Place milk in a large bowl that’s big enough to dip the chicken in. Next coat both sides of the seasoned chicken in the flour, making sure to shake off the excess.
Next, quickly dip the chicken in the milk, then dip it back into the flour. Shake off the excess flour then place on the baking sheet, skin side up. Repeat process until with each piece of chicken. Make sure the pieces of chicken do not touch each other on the baking pan, the will help it to brown rather than steam. Next generously spray the chicken with the canola spray, then place into preheated oven and bake for 50 minutes or until golden brown.

Looks really crispy Jehan. I can’t remember the last year I bought much less use oil spray. Is there anyway to get around that?

MUST try this as soon as I can! I’ve always been a bit skeptical of oven fried because I was afraid of being disappointed in a soggy exterior. Your chicken looks amazing, though your food, always does! I LOVE Fried, but the smell stays with your kitchen for days, the splatter, all of it! I can’t remember the last time I’m made it, BUT this … I promise is moving to the top of the list! THANK YOU!
No soggy chicken here. When reheating I would recommend doing so in the oven.

This looks fantastic.
However, I would avoid Canola oil at all costs.
I only use Olive oil, Coconut oil and Flaxseed oil.
Can we place the chicken on a rack? I’m thinking that this way the heat will be all around the chicken.

Hi, I’ve done it both ways and prefer the results of the chicken baked on the pan but you can try it that way.
I love making my chicken like that I have been making chicken like yours for 30 years my daughter did not like fried chicken in the skillet so I would bake fry it.But just now I use the spry instead of the oil.

I just made the oven baked chicken it came out so moist on the inside but very crispy on the outside. It saves so much time in the kitchen as I was able to make the side dishes while the chicken was in the oven. This is the first time I actually made one of your recipes and I CAN’T wait to try many more.

Loved this chicken recipe – I used skinless thigh fillets but would use bone in pieces next time but the taste was amazing. Lots of family contentment 🙂 The chicken was crispy and flavourful, a great alternative to fried chicken.

Jehan, this recipe doesn’t tell how much parsley to use, but the directions say to mix it with spices. Is it a secret?

Jhana, you can use corn oil spray. I wouldn’t recommend olive oil since it has a distinctive flavor.

My husband loves this recipe. I used skinless chicken breasts to keep it healthy. He was so disappointed when he thought in lost this recipe. I didn’t realize I had the name wrong and I had the recipe all along. I am making it tonight (2/23/2015).
When my husband said he wanted chicken and waffles and I noticed I didn’t have egg, I panicked. Googled you and found this recipe! This chicken is so yummy. I made this recipe today. It is very good. My question is I made only chicken wings. They did come out very very brown- almost burnt.
Is there a different baking process for wings? Meaning temp and/or time?

This recipe really delivers! I made it for my husband’s birthday on Thursday and it was so good that he asked me to make it again on Saturday. I made it with the skin on, but next time I’m going to try a couple of pieces without skin to see how it does. Thanks for the great recipe!
Oh my lord, this was delicious. I made it a few days ago and I will tell you, I know how to fry chicken but this oven fried was great!! I must confess, I did double all the spices in the flour mixture as I love spice and if I cannot see the spice in the flour, then in the back of my head, I can’t taste it :o)
I made today and it looks nice and crispy on top but moist and soggy on bottom. What can I do next time?
Dina you can try placing the chicken on a rack, that should prevent the bottom from being soggy.
