Boring bird transformed
I am not a fan of chicken at all so everytime I’m faced with cooking the bird, I’m looking for new bold flavors to add to the bland meat. Today I had 3 lbs of bone-in breast meat staring back at me on my kitchen counters. I was contemplating throwing it back into the freezer and just pull out some beef, but I’ve been on a steakfest lately and realized it was time for something different. So what to do with this darn chicken breast?? I decided to bread it and deep fry it…crispy fried chicken was today’s lunch. I raided my spices and just keep adding until it just didn’t make sense anymore, I was determined to make fried chicken into something extraordinary. I think I did it! It was spicy, crispy and very aromatic, this bird was boring no more.
Crispy Fried Chicken
Seasoning Mix
2 tsp garlic powder
2 tsp onion powder
1 tsp dried mustard
2 tsp paparika
1/2 tsp cayanne pepper
2 tsp salt
3/4 tsp cinnamon
3 lbs chicken, cut up ( I used breast, but feel free to use your favorite pieces)
1 egg
1/4 cup milk
1/2 cup flour
1/2 cup seasoned bread crumbs
3 cups canola oil ( adjust according to the size of your pot)
Mix all the ingredients of the dry rub in a small bowl set aside. Mix flour and bread crumbs together in a plate and add 1 tbsp of dry rub, mix well. Add remaining dry rub to chicken breast. In a shallow bowl beat egg and milk and milk together.
On a medium fire heat about 2 inches of oil. Dip chicken into egg mixture then into flour mixture. Fry chicken 8 to 10 mins per side until golden brown. Drain on paper towels.
This was so goooooooooooooood! Had two large pieces. Now I’m stuffed.
Great recipe. Question- I love using panko bread crumbs when I make fried chicken because of how crispy and delicious the fried chicken ends up being. Would you recommend me to use it for your recipe?
I’ve never used Panko bread crumbs but I don’t see why not…go for it!
I think this is the first time I’ve heard someone say that they don’t like chicken. Well except vegetarians of course! 🙂
I know, I know…people are always shocked when I say that. Eventhough I’m far from a vegetarian I’m more of a pork, beef and seafood fan.
