Oven Jerk Chicken

I’m all for convenience and easy meals and this Oven Jerk Chicken is both. It’s super easy to make, the marinade for the chicken is just a few ingredients including premade jerk seasoning.

Ingredients

  • 5 lbs chicken pieces
  • ½ cup jerk seasoning
  • 1 tsp dark soy sauce
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp crushed ginger
  • About 15 sprigs thyme

Instructions

  • Mix all ingredients together then cover and let marinate in the fridge overnight.
  • Place in a baking pan in one layer and over with foil. Place into an oven preheated to 350 degrees and bake for 50 minutes.
  • Remove from oven and remove foil. Baste chicken. Turn the oven temperature up to 425 degrees then place chicken back into the oven.
  • Bake for an additional 15-20 minutes until chicken is golden brown. Serve warm.
