BEEF STEW

Ingredients

  • 2 lbs beef cubes
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp red pepper flakes
  • 1 tsp paprika
  • 2 tbsp green seasoning
  • 1 tsp salt
  • 2 tsp Worcestershire sauce
  • 1 tsp oil
  • 1 tbsp tomato paste
  • ½ onion slice
  • 3 cups beef stock or water and beef cubes
  • 2 bay leaf
  • 1 sprig rosemary
  • 6 sprigs thyme
  • 2 carrots cut into pieces
  • 2 potatoes cut into cubes

Instructions

  • Season beef with garlic powder, onion powder, red pepper flakes, paprika, green seasoning, salt and Worcestershire sauce.
  • To a pot over high heat add oil. Add beef and brown until all the liquid has evaporated.
  • Add tomato paste and stir to combine. Add onion and cook for about 2-3 minutes. Add beef stock, bay leaf, rosemary and thyme.
  • Bring to a boil and reduce to a simmer, cover and cook until tender. If using a pressure cooker, pressure on high for 20 minutes that release the pressure.
  • When beef is tender, but not falling apart, add carrots and potatoes and cook for an additional 20-25 minutes or until the vegetables are tender. Remove from heat and serve over rice.
