SPANISH RICE

Ingredients

  • 1 ½ tsp oil
  • ½ onion
  • 3 cloves garlic smashed
  • 1 ½ tbsp tomato paste
  • 2 cups rice
  • 3 ½ cups water
  • 3 chicken bouillons
  • ½ tsp cumin
  • Salt to taste
  • Chopped cilantro

Instructions

  • Add oil to a pot over high heat; when oil is hot add onion and garlic and sauté for about 3 minutes, or until softened.
  • Add tomato paste and cook for about 2-3 minutes, stirring frequently.
  • Add rice, water, crumbled bouillons, cumin and salt and stir. Bring to a boil, then reduce heat to low and cover pot.
  • Cook for 20-25 minutes or until rice is tender, then garnish with chopped parsley
