CABBAGE AND SALTFISH

Ingredients

  • 1 lb saltfish soaked in water overnight to remove salt
  • 1 ½ tbsp oil
  • 1 tbsp crushed garlic
  • 1 ½ tsp crushed ginger
  • 1 large tomato diced
  • ½ onion chopped
  • Splash of lime juice
  • 3 scallion chopped
  • 1 tsp black pepper
  • 1 tbsp tomato paste
  • ½ head of cabbage finely chopped

Instructions

  • In a frying pan add oil. When oil is hot add garlic, ginger and onion and fry for a minute.
  • Add salt fish and a splash of lime juice and cook for 5 minutes stirring occasionally.
  • Next add tomato paste and tomato and cook for about 5 minutes until the tomatoes begin to break down.
  • Add scallion, black pepper and cabbage and cook until the cabbage has softened about 10-15 minutes.
