LAMB AND ZUCCHINI CURRY

Ingredients

  • 2 lbs lamb cut into chunks I used lamb shoulder chops
  • 1 tbsp + 2 tsp oil
  • 2 tbsp curry powder
  • ¼ tsp geera cumin
  • ½ tsp garam masala
  • 2 zucchini chopped into small pieces
  • ½ onion thinly sliced
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 4 cloves garlic thinly sliced
  • 3 cups water

Instructions

  • Place lamb in a bowl and coat with 2 tsp oil, curry powder, geera and garam masala.
  • On a pan over medium high heat, add oil. When oil is hot, add lamb so it forms one layer in the pot.
  • Allow chunks lamb to brown on all sides by turning while cooking. When all sides of the lamb is brown, add zucchini, onion, salt, black pepper and garlic and allow to cook for about 5 minutes.
  • Next add water and bring to a boil. Reduce heat to medium and allow to simmer until the lamb is tender and the zucchini has melted into the stew about 20 minues. Remove from heat.
  • Serve warm with rice or roti.
