Eggless Hot Cross Buns

Ingredients

  • 2 cups all-purpose flour
  • 2 1/4 tsp rapid rise yeast
  • 1/3 cup sugar
  • 1/2 tsp cinnamon
  • 1/8 tsp ground cloves
  • pinch of salt
  • 3/4 cup milk
  • 3 tbsp butter
  • 1 tsp orange zest
  • 1/2 cup currants

Flour Paste

  • 1/4 cup flour
  • 1/4 cup water

Glaze

  • 1/3 cup water
  • 2 tbsp sugar

Instructions

  • In a large bowl, combine the flour, sugar, yeast, cinnamon, and cloves. Set aside.
  • In a microwave-safe bowl, heat the milk for about 1 minute until warm but not hot (approximately 120 to 130 degrees Fahrenheit). Melt the butter and allow it to cool slightly.
  • Add the warm milk, melted butter, salt and orange zest to the dry ingredients. Using a mixer with a dough hook attachment, beat on low speed for 10 minutes until the dough is smooth. The dough will be slightly sticky.
  • Grease your hands or sprinkle a teaspoon of flour onto a clean surface to prevent the dough from sticking. Knead the dough into a ball and let it rise in a greased bowl for 1 hour or until doubled in size.
  • Divide the dough into 6 equal pieces and shape them into balls. Place the balls in a greased baking pan, cover with a towel, and let them rise for 45 minutes or until almost doubled in size.
  • Preheat your oven to 350 degrees Fahrenheit.

To make the cross:

  • In a small bowl, combine the water and flour to form a paste. Transfer the paste into a piping bag and pipe crosses onto the buns.
  • Bake the buns in the preheated oven for 20 minutes or until golden brown. While the buns are baking, prepare the glaze.

To make the glaze:

  • In a small pot, combine the water and sugar. Cook over medium heat for about 5 minutes until the sugar is dissolved and the mixture thickens slightly.
  • Once the buns are done baking, remove them from the oven and brush the tops with the prepared glaze while still hot.
  • Serve warm.
