Break up any clumps in the rice using your fingers. In a large frying pan or wok add bacon and cook until brown then remove from pan using a slotted spoon.
Add onion and sauté for 1 minute then add garlic and cook for 30 seconds, then add rotisserie chicken and stir to combine.
Add rice, frozen peas and carrots, soy sauce, black pepper, ground ginger and salt and mix well. Cook on high heat. Spread rice out and let cook until a crust starts to form on the bottom.
Add cooked bacon, scallion, and sesame oil, then mix to combine. Serve immediately.
