Lately I’ve been in an easy, breezy kind of mood.  Even though my body is in Atlanta, my mind is miles away on an Island somewhere in the middle of the Caribbean sipping on something and Rum without a care in the world.   Join me….

Tamarind Cooler

8 oz Tamarind Pulp

3 quarts hot water

3 cups sugar

Place tamarind and sugar in a large mug.  Pour hot water over tamarind mixture.  Stir to break up the pulp.   Let sit for 10 minutes, then strain to remove pulp.   Chill before serving.
