Jerk Marinade

Ingredients

  • 3 tbsp ground pimento or allspice
  • 6 cloves garlic
  • 1-2 scotch bonnet peppers
  • 3 scallion
  • 2 tbsp thyme leaves
  • 1 small onion
  • 1 tbsp salt
  • 1/2 tsp nutmeg
  • 2 tbsp brown sugar
  • 1 1/2 tbsp soy sauce
  • juice of half lime

Instructions

  • Place all ingredients in a food processor or blender and mix until it’s a fine paste.   You can also grind all the ingredients in a mortar and pestle.  Makes 1 ½ cup jerk seasoning mix.
