Pepper Steak

Ingredients

  • 2 lbs thing round steak strips, ribeye or sirloin
  • 1 tsp black pepper
  • 2 tsp light soy sauce
  • 1 tsp rice vinegar
  • 2 tsp cornstarch
  • 1 tbsp minced garlic
  • 1 tsp ginger
  • 1 red bell pepper cut into pieces
  • 1 green bell pepper cut into pieces
  • 1/2 yellow onion, cut into strips
  • 1/2 tsp salt

For the Sauce

  • 1/4 cup light soy sauce
  • 2 1/2 tsp sugar
  • 1/3 cup cups water
  • 2 tsp cornstarch

Instructions

  • To prepare the steak, start by seasoning it with black pepper, soy sauce, rice vinegar, and 2 teaspoons of cornstarch. Mix everything together well and set it aside.
  • Next, it's time to make the sauce. In a separate bowl, combine soy sauce, sugar, water, and cornstarch, then whisk everything together until it's smooth and fully combined.
  • Now, heat up half of the oil in a large pot over high heat. Add half of the seasoned steak and spread it out in a single layer. Let it cook for about 2 minutes until it's nicely browned, then flip it over and cook for another minute on the other side. Once cooked to your liking, remove the steak from the pot and place it on a plate. Be careful not to overcook the steak, as it can become chewy.
  • Repeat the same process with the remaining half of the steak, then set it aside.
  • In the same pot, add the remaining oil and stir in the garlic, ginger, bell peppers, and onion. Stir fry everything together for 2-3 minutes until the vegetables are slightly softened.
  • Pour in the sauce and let it cook until it thickens up a bit. Then, add the steak strips back into the pot and stir everything together to coat the steak in the sauce. Cook everything for an additional minute, then remove it from the heat.
  • To serve, place the Pepper Steak over a bed of fluffy white rice and enjoy!
