Oven Jerk Chicken With Video
I’m all for convenience and easy meals and this Oven Jerk Chicken is both. It’s super easy to make, the marinade for the chicken is just a few ingredients including premade jerk seasoning. If you prefer to make your own I have a great recipe for homemade Jerk Seasoning. To give it a bit of freshness, the chicken is marinated with fresh ginger and thyme. It’s ideal to season the chicken the night before and let it marinate in the fridge overnight. The marinade soaks into the chicken and makes it extra tasty! If you’re short on time like I usually am, marinating it for just a few hours works as well.
How to Cook Jerk Chicken
Oven Style: Obviously this is a recipe for oven Jerk chicken so that’s one way of making it! You can cook it the way in which I did or you can roast it. Place in a large baking sheet pan, spread the chicken apart so that they don’t touch each other. Roast at 400 degrees for 40-45 minutes.
On the Grill: The correct way to cook jerk chicken is on the grill. Cooking on an open flame makes it taste even better. Cook over indirect high heat for about 15-20 minutes until the chicken reaches an internal temperature of 165 degrees.
Air Fryer: Air frying is the latest and greatest when it comes to cooking. It’s quick, produces delicious chicken and less than half the time it takes in the oven – it’s no wonder it’s become so popular. To cook in an air fryer, spray the air fryer basket with cooking spray. In one layer, making sure that the pieces aren’t touching each other, place chicken pieces then cook for 16 minutes at 400 degrees.
Get the Recipe Oven Jerk Chicken
Ingredients
- 5 lbs chicken pieces
- ½ cup jerk seasoning
- 1 tsp dark soy sauce
- 1 ½ tsp salt
- 1 tsp black pepper
- 1 tsp crushed ginger
- About 15 sprigs thyme
Instructions
- Mix all ingredients together then cover and let marinate in the fridge overnight.
- Place in a baking pan in one layer and over with foil. Place into an oven preheated to 350 degrees and bake for 50 minutes.
- Remove from oven and remove foil. Baste chicken. Turn the oven temperature up to 425 degrees then place chicken back into the oven.
- Bake for an additional 15-20 minutes until chicken is golden brown. Serve warm.

Any tips for halving this recipe? Say, for 2.5 – 3 lbs of chicken? Do I just halve everything?
I ask because sometimes there are some ingredients which perhaps ought not to be halved so as to retain flavour intensity.
